GUACAMOLE

  
1 medium ripe avocado, seeded and peeled	  1 garlic clove, minced
1/4 cup finely chopped onion                      1/4 tbsp. salt (optional)
2-4 1/2 tsp. lemon or lime juice		    
1 small tomato, seeded and finely chopped	      
1 tbsp. finely chopped green chilies

First, cut the avocado in half, lengthwise. Twist to separate from seed. Remove seed. Scoop the meat from the skin with a tablespoon and place in a bowl. Add lemon or lime juices. Mash with fork, leaving chunky. Stir in other ingredients. Chill. Serve with tortilla chips. Tip: the lemon or lime juice will keep your dip looking fresh and will prevent discoloration until served. Or, before chilling place the seed you removed from the avocado on top of the dip. Remove seed before serving.
