North Carolina Blueberry Muffins

  
1 cup sugar			1 cup buttermilk
½ cup melted margarine		1 ½ cup washed fresh blueberries
2 eggs				2 Tbsp. vanilla
2 ½ cup self-rising flour

Mix all ingredients together, except blueberries. Stir until moistened. Add blueberries. Pour into greased muffin tins until ¾ full. Sprinkle tops with extra sugar pinched between your fingers. Bake 375° for 30 minutes.

* No buttermilk? Try my mom's remedy! Add 1 capful vinegar to 1 cup milk. Let it set a few minutes. It works like a charm!
